Happy Cinco de Mayo!
I thought I would help celebrate today by sharing with you my homemade guacamole recipe. It’s a crowd pleaser and super easy. Being gluten free – I eat my fair share of Mexican food (*most* of it can be made GF), so it’s only natural I have a favorite guac recipe, right? This is also a great dish for both Spring time and of course, Summer.
Ingredients:
2 Avocados
1 Roma Tomato
1/2 Lime ( for juice – or more if you like!)
2/3 cups of fresh corn
Salt & Pepper
Directions:
1. Combine avocados, tomato and corn in a bowl & mix!
2. Add Salt, Pepper and Lime Juice to taste. (Sometimes I also add garlic salt.)
Tips: *I like mine chunky so I use a fork to stir. I also use a “criss-cross” method with a knife to each avocado before scooping it out. I used to whip this up sans corn but more recently, added it, so if you aren’t a fan – it’s just as tasty without!
